
We don't have much time left, summer is seriously around the corner and that bikini is calling out your name. Breakfast is the most important meal of the day, not to be skipped, so here's a great recipe to jump fuel your mornings the healthy way.
Open Feta Cheese & Tomato Omelet (2 servings)
5 extra-large eggs
salt and pepper
2 tablespoons water
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh mint
3 scallions, finely chopped
3 ounces reduced fat feta cheese, crumbled
8 small cherry tomatoes, halved
Preheat broiler. Break eggs into a bowl and beat lightly with a fork; season w/salt & pepper. Add 2 tablespoons water, the basil, mint and scallions; mix briefly.
Spray a large ovenproof skillet w/cooking spray. Pour in egg mixture and cook over medium heat for 4-5 minutes, pushing the mixture from the sides to the center of the pan w/a spatula until the omelet is half cooked.
Top w/the feta and the tomato halves, cut sides up; cook for 2 minutes. Slide pan under a preheated broiler and cook until light golden brown. Serve immediately.
